Tiramisu with Catunambú Coffee

Ingredients (for 6-8 servings):
- 4 eggs (separated into yolks and whites)
- 100 grams granulated sugar
- 500 grams mascarpone
- 200 ml strong Catunambú coffee (cooled)
- 1 pack ladyfingers
- 2 tablespoons amaretto or coffee liqueur (optional)
- Cocoa powder (for garnish)
- Dark chocolate (optional, for extra decoration)
Instructions:
Brew the coffee:
Prepare a strong cup of Catunambú coffee and let it cool completely. For a deeper flavor, use espresso or a double espresso.
Whisk the egg yolks with sugar:
Place the egg yolks in a bowl and add the sugar. Beat with a mixer until the mixture becomes creamy and pale yellow.
Add the mascarpone:
Mix the mascarpone into the egg yolk mixture until smooth and lump-free.
Beat the egg whites:
In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the mascarpone mixture to keep it light and airy.
Dip the ladyfingers:
Combine the cooled Catunambú coffee with the amaretto or coffee liqueur (if using). Briefly dip the ladyfingers into the coffee – avoid soaking them too much.
Assemble the tiramisu:
Start with a layer of soaked ladyfingers in a dish.
Spread a layer of the mascarpone mixture on top.
Repeat the layers until all ingredients are used, finishing with a layer of mascarpone.
Chill the tiramisu:
Place the tiramisu in the refrigerator for at least 4 hours to set and allow the flavors to meld.
Garnish:
Just before serving, generously dust the top with cocoa powder and, if desired, sprinkle some grated dark chocolate over it.
